Summer Sunshine Fruit Salad


Ingredients:
Salad:
1 cup strawberries, halved
1 cup blueberries
1 cup watermelon, cubed
1 cup mango, diced
1 cup pineapple, chopped
1 kiwi, peeled and sliced
1 banana, sliced (optional – add just before serving to prevent browning)
Fresh mint leaves (for garnish)
Honey-Lime Dressing:
2 tbsp honey (or agave for vegan version)
Juice of 1 lime
Zest of ½ lime
Optional: ¼ tsp grated fresh ginger for a zingy kick
Instructions:
In a small bowl, whisk together the honey, lime juice, lime zest, and optional ginger until smooth.
In a large bowl, combine all the prepared fruits.
Drizzle the dressing over the fruit and gently toss to coat.
Chill for 10–15 minutes before serving for best flavor.
Garnish with fresh mint leaves and enjoy!
Tips:
Add a sprinkle of chia seeds or toasted coconut for texture.
For a twist, toss in a handful of pomegranate seeds or a splash of orange juice.
