Blueberry Banana French Toast
Ingredients:
For the French Toast:
4 slices whole-grain bread (sturdy bread works best)
1 ripe medium banana, mashed well
2 large eggs (or 4 egg whites for a lighter option)
1/4 cup milk of choice (dairy or non-dairy like almond or oat milk)
1/2 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
1/4 cup fresh or frozen blueberries (plus more for topping)
Cooking spray or a small amount of coconut oil for the pan
Optional Toppings:
Fresh blueberries
Sliced banana
A light drizzle of pure maple syrup or honey
A dollop of Greek yogurt (plain or vanilla)
A sprinkle of chopped nuts or a small spoon of nut butter
Instructions:
Prepare the Batter: In a shallow dish or bowl, mash the ripe banana thoroughly until smooth. Add the eggs (or egg whites), milk, cinnamon, and vanilla extract. Whisk everything together until well combined and relatively smooth.
Add Blueberries: Gently stir in the 1/4 cup of blueberries into the French toast batter.
Heat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly spray with cooking spray or add a small amount of coconut oil.
Dip the Bread: Dip each slice of whole-grain bread into the banana-egg mixture, ensuring both sides are well coated. Allow any excess batter to drip off. If the blueberries don't stick, you can gently press a few onto the bread slice with a spoon.
Cook the French Toast: Place the coated bread slices on the heated pan. Cook for 3-5 minutes per side, or until golden brown and the egg is cooked through.
Serve: Transfer the cooked French toast to plates. Top with fresh blueberries, sliced banana, and any other desired healthy toppings. Serve immediately.
